Sopa Cheesecake Dessert

Here’s a quick and easy to make delish dessert. This is a great make ahead dessert to take anywhere! The waiting is what will kill ya on this one. It will need to chill for several hours but overnight is the best if you can hold out that long!

Here’s what you’ll need...
2 cans of Crescent Rolls
3 8oz packages of Cream Cheese (needs to be at room temp)
1 1/2 c Sugar
1 1/2 tsp of Mexican Vanilla (if you don’t have a friend to let you borrow her Mexican Vanilla, you can use regular Vanilla)
For topping...
1/4 c (Half stick) melted Butter
1/2 c Sugar
1 tsp Cinnamon
*Optional: 1/4 c sliced Almonds and 1/4 c Honey

Heat oven to 350 and butter or spray a 13x9 baking dish, set aside.
Add Cream Cheese, Sugar, and Vanilla to your mixer. The paddle attachment works best with this recipe. You can also use a hand mixer if you don’t have a stand mixer.
Start out on Low speed and then best for 3-4 minutes on Med speed. You want it to be smooth and creamy like cream cheese frosting.
Open one can of Crescent rolls and spread out evenly in the baking dish. Pinch the seams together to make one solid sheet of dough.

Next, add the cream cheese mixture on top and spread evenly. I added a light sprinkling of Cinnamon on top but you don’t have to.

Then spread out the second can of Crescent rolls on top. I laid mine out on the counter and pressed the seams together and then put it on top of the cream cheese mixture.
Finally, brush the melted butter over your top layer of dough. Mix the 1/2 cup sugar and the tsp of cinnamon together and sprinkle on top of the buttered dough.
If you decided to use the almonds, add them on top now and then put your dish in the oven.

Bake for about 40 min. Pull it out and drizzle on the honey if you decide to use it. Let cool to room temp. for at least 2 hours and then put in the fridge for a couple hours or overnight if you can. Enjoy!
