Saturday Sweets…

Good afternoon everyone! I hope you all made it through the week in one piece! ?

Writing this blog and baking more has really made feel calmer and more together during my work week.

This week I am having dental surgery which I am definitely not looking forward to. Since it’s on Thursday, I am hoping to be feeling better in time so that I can bake and post next weekend.

I will post my Keto friendly pie tomorrow, I had an issue with one of the ingredients today and I am too lazy to go to the store.

My first recipe is for some yummy Chocolate Popovers. Usually Popovers are more savory but I always like to try and go sweet. They take some time to bake but are quick and easy to make.

My second recipe for today is Toffee Bars. They are also a quick easy chocolatey sweet treat! I found this recipe in one of my Grandma’s old Tupperware cookbooks, circa 1993. These will going to a good friend for his birthday today. I will be making him put a wonderful comment about them on my website as well. ?


Chocolate Popovers

Here’s what you’ll need…

1/4c White Sugar

2 tbsp Unsweetened Cocoa Powder

Dash of Salt

3/4c + 2 tbsp Flour

1c Whole Milk

4 Eggs at room temp

2 tbsp melted cooled butter

3/4 tsp Vanilla


Move your oven rack to the third rack from the bottom. Prepare your popover pan by coating each cup with butter. If you don’t have a popover pan you can use small custard cups as well. I put a little dab of butter in the bottom of cup as well. Put it on a cookie sheet, put in the oven, and turn your over on to preheat to 375.

Sift the dry ingredients into a bowl and set aside.

Add the 4 Eggs to your mixing bowl and mix on low speed for one minute.

Add in the melted butter, milk, and vanilla until well mixed.

Add half of the dry ingredients, let mix for 30 seconds and then add the other half. Mix until just incorporated. Be careful not to over mix the batter. The batter will be liquidy.

Carefully pull your popover pan out of the oven and pour enough batter in to fill the cups up halfway or so. (I filled mine up a little less than 3/4 of the way. They were huge and pretty cool looking. So I guess fill them up anywhere you want between 1/2 and 3/4).

Bake for approx. 50 minutes. Remove from the oven, pull the Popovers out of the cups and let cool on wire rack. Eat right away or store in a plastic bag or container until they are all gone. Enjoy!


Chocolate Toffee Bars…

Here’s what you’ll need…

1 Stick softened Butter

1/2 c Brown Sugar (I always use dark)

1 egg yolk

3/4 tsp Vanilla

1 c Flour

1 heaping cup of Chocolate Chips (your choice)


Preheat your oven to 350. Butter or spray a 9×13 pan and put it aside.

Cream the butter and sugar in your mixer. Turn your mixer on low and add in the yolk and vanilla, mix well.

The picture below is what happens when half-ass read a recipe and forget an important ingredient. I totally skipped over reading the part about adding the flour. I just poured what I had in my dish and spread it out wondering why it looked like so little to fill out the whole pan. ?

So make sure you add in the flour next and mix until incorporated.

Spread evenly in your pan and bake for about 15 min until golden. I found it a little hard to spread so I used a knife and my fingers to spread it out.

Remove from the oven and sprinkle the chips evenly over the top. Put them back in the over with the door cracked open for about 2 minutes. Pull them out and spread the chocolate over the top with a knife. Sprinkle a little sea salt over the top or some chopped nuts of you prefer. Cut into squares while still warm. Enjoy!
