Happy Sunday! The sun is out, I’m drinking coffee and making some treats. I’ve got a busy short work week ahead so I’m just trying to make this Sunday last as long as possible.
I am going river rafting on Friday and I’m pretty excited and anxious about it. I usually say no to anything out of my comfort zone and that’s a pretty small zone. ? I’ve never been and I have been promised that I will not fall out of the boat and drown. I want this in writing just in case. Melissa told me I won’t fall out of the boat and drown. ? I know it will be a fun time with good friends and a steak dinner at the end! Plus, I get to go to my favorite place in Leavenworth: The Oil and Vinegar Cellar! They have so many wonderful Oils and Vinegars that you can taste. And of course I will be going to the candy shops too!
Since my Dad lives out of state I am making a couple treats for him today and shipping them off tomorrow. His Birthday and Father’s Day are always in the same week so I am sending one treat for each.
I’m making Peanut Butter Chocolate Chip Cookies first. I found this recipe on Allrecipes, thank you for the inspiration Kathy Bliesner! These cookies turned out great!
Then, I’m making the same Banana Bread I made for my Grandma recently but I’m going to add some mini Chocolate Chips to it. You can find my Banana Bread recipe in my Mother’s Day blog last month.
I hope you give both of these recipes a try!
Here’s what you’ll need…
1/2 c softened Butter (one stick)
1/2 c Peanut Butter
1/2 c White Sugar
1 c Brown Sugar
2 tbsp Water
2 tbsp Light Corn Syrup (I was going to use Honey because I didn’t want to buy a whole thing of Corn Syrup. But, I ended up having some at home.)
2 tsp Vanilla
1/4 tsp Salt
1 tsp Baking Soda
2 1/2 c Flour
2 c Chocolate Chips (I used 1 cup of mini chips)
Heat your oven to 375 and get out a couple of cookie sheets.
In your mixer cream together the butter, both sugars, and peanut butter. Mix on Med for a couple of minutes.
Add in the eggs one at a time, mixing well after adding each egg.
On low, mix in the Water, Corn Syrup, and Vanilla.
Finally, add in the Baking Soda, Salt and Flour. Mix on Low just until blended.
Fold in the Chocolate Chips, make sure to scape the bottom of your bowl to get everything all mixed up.
Put a heaping tablespoon onto your cookie sheets, baking one at a time. The cookies don’t really spread so you can easily get a dozen in your sheet. Bake about 10 minutes. Enjoy!
I did the first batch at 12 minutes and they were dark and overdone. I still ate them but they will not be going to my Dad. ?
