My latest cake, German Chocolate! Thank you Kristi for your order! This one was a doozy. I went in thinking it would be so easy and it was anything but that! ? My first attempt is shown in pic #3, I felt bad throwing out good cake so I saved it to eat.? The cakes looked weird to me when they came out of the oven but I just figured I was being paranoid. Nope. They seemed really unstable and both completely stuck to the bottom of the pans. I now know I have to use parchment every time. I managed to kinda save one layer and decided to cool it in the fridge hoping it would stay together better if cool. Well, I wasn’t holding it steady. It slid into the fridge, fell out and as I caught it, it totally folded in half. ?. So I swore a bunch and then started over at 9pm. I tried melted chocolate in the recipe the first time and I think that’s what threw the whole thing off. I remade the cakes with parchment and the original recipe, they turned out perfect! Looked nothing like the first two. Thursday night was frosting night. I filled the cake with the coconut frosting and then started on the top. That’s when I realized there was no way I could frost the sides of the cake. Even after chilling it, the frosting was just too “rough” for the cake. So, I whipped up a batch of my signature Chocolate Buttercream and frosted the sides with it. Finally, I added the cherries on top and I was done! In the end it turned out great, I was super happy with it. Lessons learned for sure.
