This is one of my favorite brownie recipes! Usually I don't frost them but I had left over frosting from a cake I made and I didn't want to waste it.
I have a tendency to overbake things when I get worried that I might not have baked them enough. I need to work on not worrying about it so much considering it has yet to happen.
Here's what you'll need for this recipe...
1 cup (2 sticks of Butter) melted
2 tsp of Vanilla
2 cups White Sugar
3/4 c Cocoa Powder (I like Hershey's Special Dark)
1/2 tsp Baking Powder
1/4 tsp Salt
1 c Flour
*You can add a cup of nuts as well if you like them.
Here's what you'll need for the Chocolate Cream Cheese Frosting...
1 package of Cream Cheese 8 oz (softened)
1/4 c Powdered Sugar
1/4 + 1 tbsp. Heavy Whipping Cream
1 c Semisweet Chocolate Chips
*You can make the frosting before or after you make the brownies.
Heat cream to a simmer and pour over chocolate chips, let sit for a couple minutes. Then stir to mix until smooth, cool slightly.
Mix the cream cheese and powdered sugar on Med speed for several minutes. Really the longer you can mix this the better so it is nice and smooth.
Once the chocolate has cooled a little, slowly mix it into the cream cheese mixture until incorporated. Then mix on Med speed for a couple more minutes. It will thicken to the perfect consistency once cooled.
To make the brownies...
Butter/Spray a 13x9 baking pan and set aside.
Heat your oven to 350.
Melt butter and cool slightly.
If you use a mixer pour the cooled butter into the mixer. You can also use a hand mixer or mix by hand in a large bowl.
Add the sugar and vanilla, mix on Med speed for about 2 minutes until light in color.
Add the eggs one at a time, mix well after each egg addition.
Add in the cocoa powder and mix well. I like to sift at least the cocoa powder because it tends to be very lumpy.
Add the baking powder, salt, and flour. Mix just until combined. I like to mix it a few times with a spatula to make sure everything at the bottom of the bowl get incorporated.
Pour into baking pan and spread evenly.
Baking time is approx. 25-30 min., watch them after the 25 minutes to avoid over baking them.
Let cool for a couple hours, frost, cut, and enjoy!
