Berry Cobbler

Berry Cobbler ‎March‎ ‎31‎, ‎2019 – Dessert Happy Sunday!

I’m getting ready for a busy week at work and thought, “I need cobbler!” Here is what you’ll need… So before I list what you need, I’ll let you know that I got fruit greedy and used way too much! I will give the amounts I should have used in the recipe below…

Heat the oven to 350

  • 5 cups of fruit, I used Peaches, Blueberries, and Raspberries
  • 3/4 c White or Brown Sugar (I like Brown Sugar better)
  • 1 to 1 1/2 tsp Cinnamon (depending on how much you like Cinnamon)
  • 1/4 tsp Nutmeg
  • 1/8 tsp Cloves
  • 3 tbsp Butter
  • 1 1/3 c Flour
  • 1 c White Sugar
  • 2 tsp Baking Powder
  • 1/4 tsp Salt
  • 1 c Milk

Mix the berries, 3/4 c sugar, and spices in a bowl and set aside. The recipes I looked at for this called for an 8×8 or 13×9 pan but I decided to use a deep dish pie plate instead.

Add the butter to your dish and put it in your preheated oven until melted, 3 minutes or so. Pull the pan out of the oven carefully. Swirl the melted butter around to coat the bottom and sides of the pan. Set it aside on the stovetop until the batter is ready to go.

Stir together the flour, sugar, baking powder and salt. Add 3/4 of the milk and stir just until combined. If it’s too dry still add the last 1/4 of the milk, it should be a little thicker than pancake batter. Pour the batter into the pan, add the fruit on top and smooth it over-evenly before baking.

Bake for 45-55 minutes until it is golden brown and does not jiggle in the center. Let it cool for at least an hour, serve with ice cream or whipped cream. Cover leftovers, if you have any. Enjoy!

Because I got fruit greedy the batter didn’t surround the fruit like it normally would have. Mine turned out great there is just more fruit than “cobbler”. We’ll see how quickly it gets eaten up tomorrow.
